Peach and Cherry Chutney

Peaches

Ingredients

1/2 cup packed brown sugar
1/3 cup vinegar
1/2 cup sweet onion, chopped
1/2 cup dried tart cherries
1 tsp. grated fresh ginger
1/4 tsp. crushed red pepper
3 cups fresh peaches, peeled and chopped

Directions

  • In a medium saucepan combine brown sugar, vinegar, onion, cherries, ginger and red pepper. Bring to a boil.
  • Reduce heat to simmer, uncovered 15 minutes, stirring occasionally.
  • Stir in peaches; cook for 3 minutes.
  • Remove from heat and let cool.
  • Serve over beef, chicken or pork, or spoon over vanilla ice cream.
